I don’t know about you, but pancakes are my comfort food. They remind me of my Nana and how every time I visit her in the Shenandoah Valley, she makes me homemade pancakes. It doesn’t matter if I’m an adult now, I can always count on Nana to pull out the griddle for some fluffy, golden cakes around the table! Comfort foods are amazing. They have this ability to conjure up moments in time and memories from your past. For me, pancakes are childhood summers spent on Nana and Pop-Pop’s farm… so much fun!
Sadly for grown-up me, pancakes aren’t exactly all that healthy. Most pre-made mixes are loaded with preservatives and ingredients I can’t pronounce. And the made from scratch versions are heavy handed with sugar, flour, and butter. So I decided to find a way to keep my comfort food (there’s nothing like warm pancakes on a chilly fall morning), but make it healthier. And what better way to make something healthy than with using my focused-nutrition go-to, Shakeology!
Now, I can’t take full credit for this recipe… my dear friend (and coach!) Ashley Van Hoven, is the MASTER of Shakeo pancakes. And with a few tweaks, I think I have a winning recipe!
- 1 scoop/packet of Chocolate, Vanilla (or Vegan Chocolate/Vanilla) Shakeology (you can head here and click “Shop” to purchase… or contact me directly!)
- 1 organic egg
- 1 teaspoon baking powder (for some added fluff)
- 3/4 of an extra ripe banana
- a little bit of pumpkin pie spice
- a little pinch of salt
- a splash of almond milk for consistency (add more if needed)
You can either mix it all together…. or for a really blended batter, you can pop it into the blender. I use the Ninja Bullet and swear by it for everything from shakes to salsas and beyond! I like to top my pancakes with almond butter, fresh fruit or honey, but get creative! I’m also a big fan of a nice side of delicious bacon to go with these super sweet pancakes!
